Description

A warm and nourishing bowl of Winter Minestrone Soup filled with seasonal vegetables and hearty flavors, perfect for cozy winter days.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 3 cups butternut squash, peeled and cubed
  • 1 medium zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups kale, stems removed and leaves chopped
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup small pasta such as ditalini or elbow macaroni
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese
  • Chopped fresh parsley
  • Crusty bread for serving

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and celery. Sauté for about 5 minutes until the vegetables soften.
  2. Add the garlic: Toss in the minced garlic and cook for 1 minute, stirring frequently until fragrant.
  3. Incorporate the squash & zucchini: Add the cubed butternut squash and diced zucchini. Cook for another 5 minutes, stirring occasionally.
  4. Building the flavor: Pour in the can of diced tomatoes with their juice and the vegetable broth. Add the bay leaf, dried oregano, thyme, and rosemary. Bring to a gentle boil.
  5. Simmer for perfection: Lower the heat to a simmer, cover, and cook for about 15 minutes.
  6. Add the finishing touches: Stir in the drained cannellini beans, small pasta, and chopped kale. Continue simmering uncovered for another 10-12 minutes.
  7. Season & serve: Remove the bay leaf, season with salt and pepper, and ladle into bowls. Top with grated Parmesan cheese and freshly chopped parsley. Serve hot with crusty bread.

Notes

This soup stores well; make a big batch and freeze portions to enjoy later. Excellent paired with crusty bread or a grilled cheese sandwich.
