Description

Delightful whoopie pies infused with spiced apple cider, creamy buttercream, and luscious caramel, perfect for fall gatherings.


Ingredients

  • 1 large egg, at room temperature
  • 220 g light brown sugar, packed
  • 113 g unsalted butter, softened
  • 0.25 teaspoon ground cloves
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup apple cider
  • Caramel sauce for filling
  • Buttercream for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and light brown sugar until smooth and fluffy.
  3. Beat in the large egg until fully incorporated.
  4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cloves, and salt.
  5. Gradually add the dry mixture to the wet ingredients, alternating with the apple cider, mixing until just combined.
  6. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them apart.
  7. Bake for 12-15 minutes or until the edges turn lightly golden.
  8. Allow the cookies to cool completely, then sandwich two cookies together with caramel sauce and a swirl of buttercream.
