- 220 g light brown sugar, packed
- 113 g unsalted butter, softened
- 0.25 teaspoon ground cloves
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup apple cider
- Caramel sauce for filling
- Buttercream for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and light brown sugar until smooth and fluffy.
- Beat in the large egg until fully incorporated.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cloves, and salt.
- Gradually add the dry mixture to the wet ingredients, alternating with the apple cider, mixing until just combined.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them apart.
- Bake for 12-15 minutes or until the edges turn lightly golden.
- Allow the cookies to cool completely, then sandwich two cookies together with caramel sauce and a swirl of buttercream.
Notes
Make the batter a day in advance and store in the fridge for the freshest flavor. Try adding nuts or different kinds of cider for a unique twist.
