Description

A colorful and nutritious salad featuring quinoa, chickpeas, fresh herbs, and a zesty lemon dressing.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained
  • 1 cup cucumber, diced
  • 1/2 cup fresh herbs (parsley, mint, or cilantro)
  • 1/4 cup pistachios, chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water using a fine mesh strainer.
  2. Combine the rinsed quinoa and 2 cups of water in a pot.
  3. Bring to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes.
  4. Remove from heat and let it cool completely.
  5. Combine the cooled quinoa, drained chickpeas, diced cucumber, chopped herbs, and pistachios in a large mixing bowl.
  6. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  7. Pour the dressing over the salad mixture and toss gently.
  8. Serve the salad chilled or at room temperature.

Notes

Make-ahead tip: This salad is best prepared a day in advance to allow flavors to meld.
