Ingredients

- 1 cup quinoa
- 2 cups water
- 1 can (15 oz) chickpeas, drained
- 1 cup cucumber, diced
- 1/2 cup fresh herbs (parsley, mint, or cilantro)
- 1/4 cup pistachios, chopped
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water using a fine mesh strainer.
- Combine the rinsed quinoa and 2 cups of water in a pot.
- Bring to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes.
- Remove from heat and let it cool completely.
- Combine the cooled quinoa, drained chickpeas, diced cucumber, chopped herbs, and pistachios in a large mixing bowl.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Pour the dressing over the salad mixture and toss gently.
- Serve the salad chilled or at room temperature.
Notes
Make-ahead tip: This salad is best prepared a day in advance to allow flavors to meld.
