Ingredients

Scale
  • Cooking spray
  • 1 medium yellow onion, diced
  • 1 large green bell pepper, diced
  • 1 lb ground breakfast sausage
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fine salt, divided
  • ½ teaspoon black pepper, divided
  • 6 slices cooked bacon, chopped, divided
  • 2 cups shredded Colby-Cheddar or Colby-Jack cheese, divided
  • 6 eggs
  • 1 ¼ cups milk of choice (we used 2%)
  • 1 (28-ounce or two 16-ounce) package frozen tater tots or crispy crowns
  • Optional for serving: Sour cream, sliced green onions, hot sauce, additional bacon

Instructions

  1. Preheat the oven to 400°F and mist a 9×13-inch baking dish with cooking spray.
  2. In a large skillet over medium-high heat, add the diced onion and bell pepper, and sauté for about 3 minutes.
  3. Add the ground sausage and cook until browned, about 5-7 minutes.
  4. Season with garlic powder, Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir well.
  5. Stir in 4 slices of chopped bacon, transfer to the baking dish, and sprinkle 1 cup of cheese on top.
  6. Add the package of frozen tater tots and toss gently to combine.
  7. In a bowl, whisk together the eggs and milk, seasoning with remaining salt and pepper.
  8. Pour the egg mixture over the casserole and top with remaining cheese and bacon.
  9. Bake for 25-35 minutes until set and golden, checking for doneness at 25 minutes.
  10. Let cool for a few minutes before serving, garnished as desired.

Notes

Prepare the casserole the night before for easy baking in the morning. Customize with veggies or different cheeses.
