Description

Ingredients

  • 1 lb ground turkey
  • 2 eggs (optional for topping)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup pineapple chunks, fresh or canned and drained
  • 2 scallions, thinly sliced for garnish
  • 2 cups cooked white rice, preferably day-old
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon gochujang Korean chili paste
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon toasted sesame seeds for garnish

Instructions

  1. Heat 1 tablespoon of vegetable oil over medium-high heat in a large skillet and cook the ground turkey for 5-6 minutes, seasoning with salt and pepper, then transfer to a plate.
  2. In the same skillet, add the remaining tablespoon of oil and sauté the onions and garlic for about 2 minutes until fragrant.
  3. Add the diced red and green bell peppers and sauté for 3-4 minutes until slightly softened.
  4. Return the cooked turkey to the skillet and fold in the pineapple chunks.
  5. In a small bowl, whisk together the soy sauce, rice vinegar, ketchup, gochujang, brown sugar, and sesame oil, and pour this over the turkey and vegetables, tossing to coat.
  6. Add the cooked rice and stir-fry for 3-4 minutes until heated through and well combined.
  7. Taste and adjust seasoning as needed.
  8. If desired, fry eggs separately and serve over portions of the rice.
  9. Garnish with scallions and toasted sesame seeds before serving.

Notes

Make ahead by storing in airtight containers and adding scallions before serving. For a crispy finish, consider oven-baking for 15 minutes at 375°F.
