- 1 lb ground turkey
- 2 eggs (optional for topping)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 yellow onion, finely chopped
- 2 garlic cloves, minced
- 1 cup pineapple chunks, fresh or canned and drained
- 2 scallions, thinly sliced for garnish
- 2 cups cooked white rice, preferably day-old
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons ketchup
- 1 tablespoon gochujang Korean chili paste
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 tablespoon toasted sesame seeds for garnish
Instructions
- Heat 1 tablespoon of vegetable oil over medium-high heat in a large skillet and cook the ground turkey for 5-6 minutes, seasoning with salt and pepper, then transfer to a plate.
- In the same skillet, add the remaining tablespoon of oil and sauté the onions and garlic for about 2 minutes until fragrant.
- Add the diced red and green bell peppers and sauté for 3-4 minutes until slightly softened.
- Return the cooked turkey to the skillet and fold in the pineapple chunks.
- In a small bowl, whisk together the soy sauce, rice vinegar, ketchup, gochujang, brown sugar, and sesame oil, and pour this over the turkey and vegetables, tossing to coat.
- Add the cooked rice and stir-fry for 3-4 minutes until heated through and well combined.
- Taste and adjust seasoning as needed.
- If desired, fry eggs separately and serve over portions of the rice.
- Garnish with scallions and toasted sesame seeds before serving.
Notes
Make ahead by storing in airtight containers and adding scallions before serving. For a crispy finish, consider oven-baking for 15 minutes at 375°F.
