Description

Vibrant and hearty stuffed bell peppers filled with ground beef, brown rice, and topped with cheese. A comforting dish perfect for any gathering.


Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon dried oregano
  • 1 ½ cups cooked brown rice
  • 4 large bell peppers
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, warm the oil. Add the ground beef, onion, and oregano; season with salt and pepper. Cook until the beef is browned.
  3. Stir in the cooked brown rice and half of the cheese.
  4. Cut the tops off the bell peppers and remove the seeds and membranes.
  5. Fill each pepper with the beef-rice mixture.
  6. Place the stuffed peppers upright in a baking dish.
  7. Sprinkle the remaining cheese on top of each pepper.
  8. Bake for 25-30 minutes until the peppers are tender and the cheese is bubbly.

Notes

Make the filling a day ahead to ease dinner prep. You can also air fry the stuffed peppers for a quicker alternative.
