Vibrant and hearty stuffed bell peppers filled with ground beef, brown rice, and topped with cheese. A comforting dish perfect for any gathering.

- 1 pound lean ground beef
- 2 tablespoons olive oil or avocado oil
- 1 teaspoon dried oregano
- 1 ½ cups cooked brown rice
- 4 large bell peppers
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, warm the oil. Add the ground beef, onion, and oregano; season with salt and pepper. Cook until the beef is browned.
- Stir in the cooked brown rice and half of the cheese.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Fill each pepper with the beef-rice mixture.
- Place the stuffed peppers upright in a baking dish.
- Sprinkle the remaining cheese on top of each pepper.
- Bake for 25-30 minutes until the peppers are tender and the cheese is bubbly.
Notes
Make the filling a day ahead to ease dinner prep. You can also air fry the stuffed peppers for a quicker alternative.
