Description

Delightful Strawberry Lemon Blondies combining sweet strawberries and tart lemon in a soft, buttery treat.


Ingredients

  • 1 cup unsalted butter
  • 2 cups brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, diced
  • Zest of 1 lemon
  • 1/4 cup lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Melt the butter in a large mixing bowl and whisk in the brown sugar until combined.
  3. Incorporate eggs one at a time and then whisk in the vanilla extract until smooth.
  4. Mix the flour, baking powder, and salt in another bowl.
  5. Combine the dry ingredients into the wet mixture, stirring gently until just mixed.
  6. Add the strawberries, lemon zest, and lemon juice, and fold gently.
  7. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10-15 minutes before slicing.

Notes

These blondies can be made ahead of time and taste better after a day. Customize by swapping fruits or adding chocolate chips.
