- 1 cup unsalted butter
- 2 cups brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh strawberries, diced
- Zest of 1 lemon
- 1/4 cup lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Melt the butter in a large mixing bowl and whisk in the brown sugar until combined.
- Incorporate eggs one at a time and then whisk in the vanilla extract until smooth.
- Mix the flour, baking powder, and salt in another bowl.
- Combine the dry ingredients into the wet mixture, stirring gently until just mixed.
- Add the strawberries, lemon zest, and lemon juice, and fold gently.
- Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10-15 minutes before slicing.
Notes
These blondies can be made ahead of time and taste better after a day. Customize by swapping fruits or adding chocolate chips.
