Description

A delightful Strawberry Flaky Puff Pastry filled with creamy cheese and sweet strawberry compote, perfect for brunch or afternoon tea.


Ingredients

  • 1 sheet store-bought puff pastry
  • 1 cup fresh strawberries, sliced
  • 60 ml lemon juice
  • 50 g granulated sugar (for compote)
  • 225 g cream cheese, softened
  • 67 g granulated sugar (for filling)
  • 120 ml heavy cream
  • 10 ml vanilla extract
  • 1.252.5 ml almond extract (optional)
  • Powdered sugar, for dusting
  • Fresh strawberries, sliced, for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Line a baking tray with parchment paper or a silicone baking mat.
  3. Cut puff pastry into six equal rectangles.
  4. Arrange pieces on the prepared tray and bake for 10–15 minutes, or until golden and puffed.
  5. Prepare the strawberry compote by cooking sliced strawberries with sugar and lemon juice over medium heat.
  6. Combine cream cheese and sugar until smooth.
  7. Add heavy cream and beat until aerated.
  8. Blend in vanilla and almond extracts.
  9. Allow the baked pastry to cool before assembling.
  10. Halve each pastry and spread cream cheese filling on the bottom half.
  11. Top with strawberries and compote, then cover with the top half of the pastry.
  12. Dust with powdered sugar before serving.

Notes

Make-ahead by preparing the strawberry compote the day before. Avoid overworking the pastry for flaky layers.
