Instructions
- Preheat your oven to 350°F.
- In a medium bowl, mix graham cracker crumbs and melted butter until all crumbs are moistened.
- Press the mixture into the bottom of an 8-inch square baking dish.
- Bake for 10 minutes.
- Let the crust cool completely.
- In a large mixing bowl, beat softened cream cheese until smooth.
- Gradually add powdered sugar and vanilla extract; beat until well-combined.
- Fold in whipped topping and diced strawberries until just combined.
- Spread the cheesecake mixture evenly over the cooled crust.
- Sprinkle strawberry crunch topping over the cheesecake layer.
- Cover with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
- Lift the cheesecake out of the dish using parchment paper overhang.
- Cut into squares and serve chilled.
