Description

A delightful slow-cooked chicken dish infused with a sweet-savory teriyaki marinade, perfect for family dinners and gatherings.

Ingredients

Scale
  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 4 cups broccoli florets
  • 1 tablespoon sesame seeds (optional)
  • 2 green onions, sliced (optional)
  • Cooked white or brown rice, for serving

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and brown sugar. Whisk until smooth.
  2. Add Chicken and Sauce to Slow Cooker: Place the chicken thighs in the slow cooker. Pour the marinade over the chicken and gently stir to combine.
  3. Cook to Perfection: Cover the slow cooker and cook on LOW for 240 to 300 minutes, or on HIGH for 150 to 180 minutes.
  4. Thicken the Sauce: About 30 minutes before serving, mix the cornstarch with cold water in a small bowl and stir this mixture into the slow cooker.
  5. Prepare the Broccoli: Steam or blanch the broccoli until bright green and just tender.
  6. Combine and Garnish: Once the chicken is cooked through and the sauce is thickened, add the broccoli and garnish with sesame seeds and sliced green onions.
  7. Serve: Dish out the teriyaki chicken on a bed of cooked rice or noodles and enjoy hot.

Notes

Make-ahead tips: Prepare the marinade the night before for convenience. Cooking alternatives: You can use an air fryer or oven for this recipe.
