  • 1 pound andouille sausage, sliced
  • 1 can (28 ounces) diced tomatoes

  • 2 cups chicken broth
  • 1 tablespoon tomato paste
  • ½ teaspoon dried thyme
  • 2 teaspoons dried oregano
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon cayenne pepper
  • 1 cup uncooked long-grain rice
  • 1 pound raw shrimp (large, about 1315 count)

Instructions

  1. Combine Ingredients: In your slow cooker, place the cubed chicken, sliced sausage, diced tomatoes, chopped onion, sliced celery, and bell pepper. Pour in the chicken broth and stir in the tomato paste, thyme, oregano, Cajun seasoning, cayenne pepper, and rice. Mix well to ensure even distribution of flavors.
  2. Set the Cooker: Cover and let it simmer on low for 7–8 hours or on high for 3–4 hours.
  3. Add Rice: One hour before your cooking time is up, gently stir in the uncooked rice, ensuring it’s fully submerged in the flavorful broth.
