- 1 head of cauliflower, chopped into florets
- 1/2 cup green olives, pitted and sliced
- 2 tablespoons capers, rinsed and drained
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Steam the cauliflower florets for about 5-7 minutes, or until tender but still crunchy. Allow to cool completely.
- Combine the cooled cauliflower, olives, capers, red onion, and fresh parsley in a large mixing bowl.
- Prepare the dressing by whisking together extra virgin olive oil, lemon juice, salt, and pepper in a small bowl.
- Dress the salad mixture with the dressing, tossing gently to combine.
- Serve immediately, or chill for about 30 minutes to allow flavors to meld.
Notes
