Description

A vibrant Mediterranean salad with tender cauliflower, briny olives, and zesty capers, drizzled with a lemon-olive oil dressing.


Ingredients

  • 1 head of cauliflower, chopped into florets
  • 1/2 cup green olives, pitted and sliced
  • 2 tablespoons capers, rinsed and drained
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Steam the cauliflower florets for about 5-7 minutes, or until tender but still crunchy. Allow to cool completely.
  2. Combine the cooled cauliflower, olives, capers, red onion, and fresh parsley in a large mixing bowl.
  3. Prepare the dressing by whisking together extra virgin olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Dress the salad mixture with the dressing, tossing gently to combine.
  5. Serve immediately, or chill for about 30 minutes to allow flavors to meld.
