Description

A vibrant and flavorful dish combining succulent shrimp and delicate linguine, all enveloped in a garlic-infused butter sauce with a zesty lemon twist.

  • 1 pound large shrimp, peeled and deveined
  • 12 ounces linguine
  • 4 tablespoons unsalted butter
  • 3 tablespoons extra-virgin olive oil
  • 5 cloves garlic, finely minced
  • 1/4 teaspoon red pepper flakes, optional
  • Zest of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup dry white wine
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Bring a large pot of salted water to a vigorous boil and cook the linguine according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of the starchy pasta water before draining.
  2. Pat the shrimp dry with paper towels and season lightly with salt and freshly cracked black pepper.
  3. In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil. Once melted, add the minced garlic and optional red pepper flakes, sautéing for about 1 minute until fragrant.
  4. Add the shrimp in a single layer and cook for 1 to 2 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.
  5. Pour in the dry white wine and lemon juice in the same skillet, bringing it to a gentle simmer to reduce slightly for 2 to 3 minutes.
  6. Add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil, stirring until melted and well combined.
  7. Return the shrimp including any collected juices to the skillet, then stir in the lemon zest and half of the chopped parsley.
  8. Add the drained linguine into the skillet, tossing everything together and adding reserved pasta water until the sauce reaches your desired silkiness. Adjust seasoning as needed.
  9. Divide among serving plates, garnishing with remaining parsley and lemon wedges. Serve immediately and enjoy!

Notes

Make-ahead tips include prepping shrimp and garlic in advance. For variations, try adding fresh vegetables like spinach or tomatoes.
