- 1 pound large shrimp, peeled and deveined
- 12 ounces linguine
- 4 tablespoons unsalted butter
- 3 tablespoons extra-virgin olive oil
- 5 cloves garlic, finely minced
- 1/4 teaspoon red pepper flakes, optional
- Zest of 1 lemon
- 1/4 cup fresh parsley, chopped
- 1/2 cup dry white wine
- 2 tablespoons freshly squeezed lemon juice
- Salt and freshly ground black pepper to taste
- Lemon wedges for serving
Instructions
- Bring a large pot of salted water to a vigorous boil and cook the linguine according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of the starchy pasta water before draining.
- Pat the shrimp dry with paper towels and season lightly with salt and freshly cracked black pepper.
- In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil. Once melted, add the minced garlic and optional red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the shrimp in a single layer and cook for 1 to 2 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.
- Pour in the dry white wine and lemon juice in the same skillet, bringing it to a gentle simmer to reduce slightly for 2 to 3 minutes.
- Add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil, stirring until melted and well combined.
- Return the shrimp including any collected juices to the skillet, then stir in the lemon zest and half of the chopped parsley.
- Add the drained linguine into the skillet, tossing everything together and adding reserved pasta water until the sauce reaches your desired silkiness. Adjust seasoning as needed.
- Divide among serving plates, garnishing with remaining parsley and lemon wedges. Serve immediately and enjoy!
