Description

A delicious fusion of traditional lasagna and breakfast favorites, featuring layers of sausage, cheese, and spinach.


Ingredients

  • 9 lasagna noodles
  • 1 pound ground sausage
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 eggs
  • 2 cups spinach
  • 2 cups marinara sauce
  • Salt and pepper to taste
  • Italian seasoning to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, cook the ground sausage, bell peppers, and onions over medium heat until browned (about 8-10 minutes).
  4. In a mixing bowl, combine the ricotta cheese, eggs, spinach, salt, pepper, and Italian seasoning; stir until smooth.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 noodles over the sauce, followed by half of the sausage mixture, half of the ricotta mixture, and a sprinkle of mozzarella.
  7. Repeat the layers, finishing with the last 3 noodles, the remaining marinara sauce, and a topping of Parmesan and mozzarella.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly.
  10. Let it cool for a few minutes before slicing and serving.

Notes

Make ahead the night before and bake in the morning for convenience. Customize with different vegetables or cheeses as desired.
