- 9 lasagna noodles
- 1 pound ground sausage
- 1 cup chopped bell peppers
- 1 cup chopped onions
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 4 eggs
- 2 cups spinach
- 2 cups marinara sauce
- Salt and pepper to taste
- Italian seasoning to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, cook the ground sausage, bell peppers, and onions over medium heat until browned (about 8-10 minutes).
- In a mixing bowl, combine the ricotta cheese, eggs, spinach, salt, pepper, and Italian seasoning; stir until smooth.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 noodles over the sauce, followed by half of the sausage mixture, half of the ricotta mixture, and a sprinkle of mozzarella.
- Repeat the layers, finishing with the last 3 noodles, the remaining marinara sauce, and a topping of Parmesan and mozzarella.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly.
- Let it cool for a few minutes before slicing and serving.
Notes
Make ahead the night before and bake in the morning for convenience. Customize with different vegetables or cheeses as desired.
