Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, blending until smooth.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Combine the dry mixture with the butter mixture until a cohesive dough forms.
- Divide the dough and roll each half into 1/4 inch thick rectangles on parchment paper.
- Spread the crushed pineapple evenly over one rectangle.
- Roll the dough tightly into a log and repeat with the second half.
- Chill the logs in plastic wrap for at least one hour.
- Slice the logs into 1/4 inch thick cookies and place on a baking sheet.
- Bake for 10-12 minutes until the edges are lightly golden.
- Cool completely and optionally drizzle with a mixture of powdered sugar and water.
