Description

Ingredients

  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, blending until smooth.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Combine the dry mixture with the butter mixture until a cohesive dough forms.
  6. Divide the dough and roll each half into 1/4 inch thick rectangles on parchment paper.
  7. Spread the crushed pineapple evenly over one rectangle.
  8. Roll the dough tightly into a log and repeat with the second half.
  9. Chill the logs in plastic wrap for at least one hour.
  10. Slice the logs into 1/4 inch thick cookies and place on a baking sheet.
  11. Bake for 10-12 minutes until the edges are lightly golden.
  12. Cool completely and optionally drizzle with a mixture of powdered sugar and water.
