Ingredients

- 2 slices of bread (sourdough, white, or whole-grain)
- 2 slices of cheese (cheddar, mozzarella, or gouda)
- 2 tablespoons of pesto
- Butter (for grilling)
Instructions
- Spread the pesto on one side of each slice of bread.
- Place one slice of cheese between the two slices of bread with the pesto sides facing inward.
- Heat a skillet over medium heat and melt a pat of butter.
- Grill the sandwich until golden brown on one side, then flip and toast the other side.
- Once both sides are crispy, remove from the pan, slice, and enjoy!
Notes
For extra flavor, consider adding sliced tomatoes or avocado. You can also experiment with different types of cheese.
