- 4 thin chicken cutlets
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 garlic cloves, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ¼ cup grated Parmesan (for sauce)
- Salt & pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Season chicken cutlets with salt and pepper.
- Dredge cutlets in flour, dip in beaten eggs, then coat with breadcrumbs and Parmesan.
- Heat olive oil in a skillet and pan-fry cutlets for 3-4 minutes on each side until golden and crisp.
- Remove cooked chicken and keep warm.
- In the same skillet, melt butter, sauté garlic for 30 seconds.
- Add chicken broth, scrape the pan for flavor, then stir in heavy cream and Parmesan. Simmer until thickened.
- Return chicken to the skillet, spoon sauce over, and garnish with parsley or thyme.
- Serve with sides like mashed potatoes, pasta, or roasted vegetables.
Notes
For optimal crust, let the dredged chicken rest for a few minutes before frying. You can prepare the sauce while cooking the chicken to save time.
