Description

A delightful chicken dish enveloped in a crispy Parmesan coating and served with a rich creamy garlic sauce.


Ingredients

  • 4 thin chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan (for sauce)
  • Salt & pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Season chicken cutlets generously with salt and pepper.
  2. Set out three bowls: one with flour, another with beaten eggs, and a third with breadcrumbs mixed with Parmesan cheese.
  3. Dredge each cutlet in flour, then dip into the egg, and finally press into the breadcrumb-Parmesan mix.
  4. Heat olive oil in a heavy skillet over medium heat and cook coated cutlets for 3–4 minutes on each side until crispy and golden brown.
  5. In the same skillet, lower the heat and melt butter, adding minced garlic and sautéing until fragrant.
  6. Stir in chicken broth and heavy cream, simmering gently, then gradually add in grated Parmesan cheese. Season with salt and pepper.
  7. Return the crispy chicken to the skillet, spooning creamy sauce over each cutlet and letting it harmonize for a minute.
  8. Garnish with chopped parsley or thyme and serve with sides like mashed potatoes or salad.

Notes

Allow the chicken to rest after frying for optimal juiciness. You can prepare the cutlets in advance.
