Description

Ingredients

  • 4 thin chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan (for the sauce)
  • Salt & pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Season the chicken cutlets generously with salt and pepper.
  2. Set up a breading station with flour, beaten eggs, and a mixture of breadcrumbs and Parmesan. Dredge each cutlet in flour, dip in the egg, then coat with breadcrumbs.
  3. Heat olive oil in a skillet over medium heat and cook the chicken cutlets for 3-4 minutes on each side until golden brown. Transfer to a plate and keep warm.
  4. In the same skillet, melt the butter, sauté the garlic until fragrant, then add chicken broth, cream, and Parmesan. Stir until thickened.
  5. Return the chicken to the skillet, coating it with the sauce, and garnish with fresh herbs.
  6. Serve with sides like mashed potatoes or roasted vegetables.

Notes

For a healthier version, consider air frying or baking the chicken. Can store leftovers in the fridge for 3 days.
