- 1 lb ground beef
- 1 cup orzo pasta
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in an oven-safe skillet over medium heat, draining any excess fat.
- Sauté the chopped onion and garlic for about 2-3 minutes until softened.
- Combine the diced tomatoes, beef broth, orzo, Italian seasoning, salt, and pepper. Stir well.
- Simmer on low heat for about 10 minutes, covered, until orzo is tender and most liquid is absorbed.
- Remove from heat and sprinkle mozzarella and Parmesan on top.
- Bake uncovered for 10-15 minutes until cheese is bubbling and golden brown.
- Garnish with parsley before serving.
Notes
For a vegetarian version, substitute ground beef with lentils or plant-based meat alternatives.
