- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter plus more for cooking
- 1 teaspoon vanilla extract (optional)
Instructions
- In a bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a second bowl, whisk the milk, egg, melted butter, and vanilla extract until they blend smoothly.
- Gently combine the wet and dry ingredients by folding them together. Be careful not to overmix; it’s okay if the batter is a little lumpy.
- Preheat your griddle over medium heat. You can test if it’s ready by sprinkling a few drops of water on it; they should sizzle and dance.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for an additional 1-2 minutes until they are golden brown.
- Serve warm with your favorite toppings.
Notes
Serve with maple syrup, fresh fruits, or whipped cream. Optional variations include chocolate chip pancakes or banana pancakes.
