- 1 cup cottage cheese
- 1 large egg
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- Pinch of salt
- 3/4 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C). Grease a 24-cup mini muffin pan generously.
- Blend the batter: In a blender, combine the cottage cheese, oats, egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt. Pulse until smooth.
- Fold in the blueberries gently.
- Rest the batter for 5 minutes to enhance texture.
- Fill each muffin cup with batter about three-quarters full.
- Bake for 18 to 22 minutes until firm and lightly golden.
- Cool in the pan for a few minutes, then transfer to a wire rack.
Notes
Serve warm with yogurt or nut butter. Can be stored in an airtight container for up to 5 days.
