Description

Delightful mini bites filled with cottage cheese and blueberries, perfect for breakfast or snacks.


Ingredients

  • 1 cup cottage cheese
  • 1 large egg
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 3/4 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 24-cup mini muffin pan generously.
  2. Blend the batter: In a blender, combine the cottage cheese, oats, egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt. Pulse until smooth.
  3. Fold in the blueberries gently.
  4. Rest the batter for 5 minutes to enhance texture.
  5. Fill each muffin cup with batter about three-quarters full.
  6. Bake for 18 to 22 minutes until firm and lightly golden.
  7. Cool in the pan for a few minutes, then transfer to a wire rack.

Notes

Serve warm with yogurt or nut butter. Can be stored in an airtight container for up to 5 days.
