Description

A delightful twist on pizza featuring crispy tortillas topped with a creamy chicken mixture, cheese, and fresh vegetables, bringing bold Mexican flavors to your table.


Ingredients

  • 4 cups (about 600 g) cooked, shredded chicken
  • 1 oz (28 g) taco seasoning
  • 540 g canned red enchilada sauce
  • 113 g canned diced green chilies
  • 60 ml sour cream
  • 230 g shredded sharp cheddar cheese
  • 230 g shredded pepper jack cheese
  • 16 taco-sized flour tortillas
  • 240480 ml vegetable oil, for frying
  • 450 g canned refried beans
  • 12 tomatoes, diced
  • 34 green onions, sliced

Instructions

  1. Combine the shredded chicken, taco seasoning, 120 ml of the enchilada sauce, diced green chilies, sour cream, and 115 g of the mixed cheeses in a large bowl.
  2. Heat vegetable oil in a skillet over medium-high heat and fry the tortillas for 1–2 minutes per side until golden and crispy.
  3. Spread a layer of refried beans onto each tortilla, then top with the chicken mixture, more cheese, and another tortilla.
  4. Pour approximately 45 ml of enchilada sauce over the top tortilla and add the remaining cheese.
  5. Arrange the pizzas on a baking tray and bake in a preheated oven at 200°C for 10 minutes.
  6. Garnish with diced tomatoes and sliced green onions before serving.

Notes

For a healthier option, consider using an air fryer. Feel free to customize toppings to suit your taste.
