Description

A flavorful and vibrant Mediterranean Beef Bowl featuring seasoned beef, fresh vegetables, and a creamy herbed yogurt sauce.


Ingredients

  • 1 lb beef (ground beef or cubed steak)
  • 2 cups cooked grains (quinoa, couscous, or brown rice)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (chopped)
  • 1/2 cup red onion (thinly sliced)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 tbsp olive oil (for sauce)
  • 1 garlic clove (minced)
  • 2 tbsp parsley (chopped)
  • 1 tbsp dill or mint (chopped)
  • Salt (to taste, for sauce)

Instructions

  1. Cook your grains according to package instructions and set aside.
  2. Season and cook the beef in a hot skillet with olive oil, spices, salt, and pepper for 8-10 minutes.
  3. Prepare the herbed yogurt sauce by mixing Greek yogurt, olive oil, garlic, parsley, dill or mint, and salt in a bowl.
  4. Assemble the bowls by layering grains, beef, cucumbers, cherry tomatoes, red onion, and drizzling with herbed yogurt sauce.

Notes

Feel free to customize by adding roasted veggies, olives, or feta cheese. Serve with pita bread or tabbouleh salad.
