- 1 lb boneless, skinless chicken thighs
- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- 2 tablespoons maple syrup
- 2 tablespoons Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the maple syrup, Dijon mustard, garlic powder, salt, and pepper. Whisk until well blended and set aside.
- In a large frying pan, heat olive oil over medium heat.
- Dice the chicken thighs into bite-sized pieces. Once the oil is hot, add the chicken and cook for about 5-7 minutes until golden brown and cooked through.
- Place the diced sweet potatoes in a baking dish, drizzle with olive oil, season with salt and pepper, and roast in the preheated oven for 20-25 minutes until fork-tender.
- Pour the maple Dijon sauce over the cooked chicken and stir to coat for about 3-4 minutes on low heat.
- Serve the chicken over a scoop of roasted sweet potatoes and garnish with fresh parsley if desired.
Notes
Make-ahead tips: Prepare the chicken and sauce a day ahead and store in the fridge. Reheat while sweet potatoes roast.
