Description

A comforting dish featuring juicy chicken breasts glazed with sweet maple syrup, served over creamy coconut rice.


Ingredients

  • 1/2 cup maple syrup
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 2 cups water
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Place the seasoned chicken in a baking dish.
  4. Drizzle the maple syrup generously over the chicken.
  5. Bake for 25-30 minutes, or until the chicken is thoroughly cooked.
  6. Rinse the jasmine rice under cold water.
  7. Combine the rice, coconut milk, and water in a saucepan, then bring to a boil over medium heat.
  8. Reduce the heat to low, cover the pan, and let it simmer for approximately 15 minutes.
  9. Remove the chicken from the oven and let it rest for a few minutes.
  10. Serve the sliced chicken over the warm coconut rice, garnishing with chopped green onions.

Notes
