Description

Golden, fluffy egg muffins filled with vibrant vegetables, savory meats, and melty cheese, perfect for busy mornings.


Ingredients

  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar, mozzarella, or feta)
  • 1/2 cup diced bell peppers
  • 1/4 cup finely chopped onion
  • 1/2 cup cooked bacon, ham, or sausage, crumbled
  • 1/4 cup chopped spinach or kale
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin.
  2. Whisk together the eggs, milk, salt, pepper, and garlic powder in a large mixing bowl.
  3. Prep your desired fillings by chopping vegetables and shredding cheese.
  4. Assemble the fillings into each muffin cup and pour the egg mixture over them.
  5. Bake for 18-22 minutes until muffins are puffed and golden.
