Description

A comforting layered bake of zucchini, creamy ricotta, and marinara sauce, topped with melted cheese.


Ingredients

Scale
  • 2 medium zucchinis, sliced
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Layer half of the zucchini slices at the bottom of a baking dish.
  3. Spread half of the ricotta cheese over the zucchini.
  4. Pour half of the marinara sauce on top.
  5. Sprinkle half of the mozzarella and Parmesan cheese over the sauce.
  6. Repeat the layering with the remaining zucchini, ricotta, marinara, mozzarella, and Parmesan.
  7. Drizzle olive oil over the top and season with salt and pepper.
  8. Cover with foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
  10. Let it cool slightly before serving, garnishing with fresh basil if desired.

Notes

You can assemble this dish a day ahead. Allow extra baking time if starting from cold.
