Description
A comforting layered bake of zucchini, creamy ricotta, and marinara sauce, topped with melted cheese.
Ingredients

- 2 medium zucchinis, sliced
- 1 cup ricotta cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Layer half of the zucchini slices at the bottom of a baking dish.
- Spread half of the ricotta cheese over the zucchini.
- Pour half of the marinara sauce on top.
- Sprinkle half of the mozzarella and Parmesan cheese over the sauce.
- Repeat the layering with the remaining zucchini, ricotta, marinara, mozzarella, and Parmesan.
- Drizzle olive oil over the top and season with salt and pepper.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
- Let it cool slightly before serving, garnishing with fresh basil if desired.
Notes
You can assemble this dish a day ahead. Allow extra baking time if starting from cold.
