- 4 large boneless, skinless chicken breasts
- 4 oz cream cheese, softened to room temperature
- 2 oz shredded mozzarella cheese
- 2 oz cooked bacon, chopped (about 4 slices)
- 3 oz fresh spinach, chopped
- 1 small garlic clove, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup unsalted butter, melted
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Grease a baking dish using nonstick spray or butter.
- In a medium bowl, combine cream cheese, mozzarella, bacon, spinach, one minced garlic clove, onion powder, smoked paprika, salt, and black pepper. Mix until creamy.
- Using a sharp knife, cut a horizontal pocket into each chicken breast.
- Stuff the creamy filling evenly into each chicken breast.
- Arrange the stuffed chicken in the greased baking dish.
- Mix melted butter, minced garlic, parsley, salt, and black pepper in a small bowl.
- Brush half of the garlic butter mixture over the stuffed chicken breasts.
- Bake for 25 to 30 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven, baste with remaining garlic butter, and let rest for 5 minutes.
