Description

Savory steak bites seared to perfection, coated in a garlic butter sauce, served with delicious avocado fries.


Ingredients

  • 1.5 lbs sirloin steak, cubed into 1-inch pieces
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 2 large ripe avocados
  • 2 large eggs
  • 1 cup almond flour
  • 0.5 cup grated Parmesan cheese
  • Spices: Smoked paprika, garlic powder, sea salt, and black pepper
  • Olive oil spray
  • Vegetables: Zucchinis, spiraled into ribbons

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. In a shallow bowl, beat the eggs. In another bowl, mix almond flour, Parmesan, smoked paprika, garlic powder, sea salt, and black pepper.
  3. Coat each avocado wedge in egg then in the almond flour mixture and place on the baking sheet.
  4. Bake the fries for 15 to 18 minutes, turning halfway through.
  5. Pat the steak cubes dry, season with salt and pepper.
  6. In a cast iron skillet, heat olive oil over medium-high heat and sear the steak cubes for 1 to 2 minutes on each side.
  7. Transfer the steak to a plate, reduce heat to medium, and melt butter in the same skillet. Add garlic and cook until fragrant.
  8. Return steak to the skillet, toss in garlic butter sauce, and sprinkle with fresh parsley.
  9. Spiral zucchini, toss with olive oil and lemon juice.
  10. Serve steak bites with avocado fries and zucchini ribbons.

Notes

Pat steak cubes dry for better searing and ensure not to overcrowd the skillet.
