- 3–4 pounds beef chuck roast
- 2 large onions, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup French onion soup
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat your oven to 325°F (163°C).
- Heat a splash of oil in a Dutch oven over medium-high heat and sear the roast for about 4-5 minutes on each side until golden-brown.
- Remove the roast and set it aside to rest.
- In the same pot, caramelize the sliced onions for about 10-15 minutes until golden brown.
- Add minced garlic and cook for an additional minute.
- Pour in the beef broth, French onion soup, and Worcestershire sauce, seasoning with salt and pepper.
- Return the seared roast to the pot, ensuring it’s submerged in the liquid.
- Cover the pot and bake for 3-4 hours, checking for tenderness.
- Garnish with fresh thyme before serving.
Notes
This pot roast is even better the next day. Store leftovers properly for amazing flavors.
