Description

A hearty and soul-nourishing pot roast infused with the rich flavors of caramelized onions and savory beef broth.


Ingredients

  • 34 pounds beef chuck roast
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup French onion soup
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Heat a splash of oil in a Dutch oven over medium-high heat and sear the roast for about 4-5 minutes on each side until golden-brown.
  3. Remove the roast and set it aside to rest.
  4. In the same pot, caramelize the sliced onions for about 10-15 minutes until golden brown.
  5. Add minced garlic and cook for an additional minute.
  6. Pour in the beef broth, French onion soup, and Worcestershire sauce, seasoning with salt and pepper.
  7. Return the seared roast to the pot, ensuring it’s submerged in the liquid.
  8. Cover the pot and bake for 3-4 hours, checking for tenderness.
  9. Garnish with fresh thyme before serving.

Notes

This pot roast is even better the next day. Store leftovers properly for amazing flavors.
