Description

Ingredients

  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish or line it with parchment paper.
  3. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, beat butter and brown sugar until light and fluffy.
  5. Add egg and vanilla extract to the butter-sugar mixture and mix until combined.
  6. Gradually add the dry ingredients and stir until just combined.
  7. Fold in the grated carrots.
  8. In a separate bowl, mix cream cheese, granulated sugar, and egg yolk until smooth.
  9. Pour half of the carrot cake batter into the prepared dish, spread it evenly.
  10. Spoon the cream cheese mixture over the batter and layer with remaining carrot cake batter.
  11. Bake for 30-35 minutes, checking for doneness with a toothpick.
  12. Cool for at least 15 minutes in the pan, then transfer to a wire rack to cool completely.
  13. Slice into squares or rectangles to serve.

Notes

Dust with powdered sugar for a touch of elegance when serving. Pair with whipped cream or vanilla ice cream.
