- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon

- 1 large egg
- 0.5 cup unsalted butter
- 1 cup freshly grated carrots
- 4 ounces cream cheese (softened)
- 1 large egg yolk
- 0.5 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×9-inch baking dish or line it with parchment paper.
- In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat butter and brown sugar until light and fluffy.
- Add egg and vanilla extract to the butter-sugar mixture and mix until combined.
- Gradually add the dry ingredients and stir until just combined.
- Fold in the grated carrots.
- In a separate bowl, mix cream cheese, granulated sugar, and egg yolk until smooth.
- Pour half of the carrot cake batter into the prepared dish, spread it evenly.
- Spoon the cream cheese mixture over the batter and layer with remaining carrot cake batter.
- Bake for 30-35 minutes, checking for doneness with a toothpick.
- Cool for at least 15 minutes in the pan, then transfer to a wire rack to cool completely.
- Slice into squares or rectangles to serve.
Notes
Dust with powdered sugar for a touch of elegance when serving. Pair with whipped cream or vanilla ice cream.
