Description

A delightful twist on a classic, this grilled cheese burrito features a crispy exterior and a melty, cheesy interior filled with seasoned beef or a plant-based alternative.


Ingredients

  • 1 pound Ground Beef (or plant-based alternative)
  • 1 packet Taco Seasoning
  • 2 cups Cooked White Rice
  • 1 cup Sour Cream
  • 1 cup Nacho Cheese Sauce
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Mozzarella Cheese
  • 1 tablespoon Chipotle Sauce
  • 4 large Flour Tortillas
  • 2 tablespoons Butter or Oil

Instructions

  1. In a skillet over medium heat, brown the ground beef, breaking it apart until well-cooked. Drain excess fat.
  2. Sprinkle taco seasoning over the beef and add a splash of water. Let it simmer to infuse flavors.
  3. In a mixing bowl, combine seasoned beef, cooked rice, sour cream, and both cheeses. Mix thoroughly.
  4. Lay out a tortilla, add a generous spoonful of filling, fold in the sides, and roll tightly.
  5. Heat skillet and add butter or oil. Grill the burrito seam-side down for 3-4 minutes until golden brown, then flip and repeat.

Notes
