Delightful homemade sourdough runzas filled with ground beef, cabbage, and onions, all encased in a tangy sourdough crust.
Ingredients

- 2 cups sourdough starter
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1/4 cup milk
- 1/4 cup water
- 1/4 cup butter (softened)
- 1 pound ground beef
- 1 cup cabbage (chopped)
- 1 onion (diced)
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- Combine the sourdough starter, flour, salt, sugar, milk, water, and softened butter in a large mixing bowl.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes.
- Cover the bowl and let dough rise for 1-2 hours until doubled in size.
- Heat a skillet over medium heat and add ground beef, cabbage, and onion.
- Cook until the beef is browned and vegetables are tender, about 8-10 minutes.
- Season the mixture with salt and pepper, then transfer to a bowl and let cool.
- Preheat the oven to 375°F (190°C).
- Roll out the risen dough to about 1/4 inch thick on a floured surface.
- Cut into squares, approximately 4×4 inches.
- Place a spoonful of filling in the center of each square and fold edges to seal.
- Transfer runzas to a parchment-lined baking sheet and brush with the beaten egg.
- Bake for 20-25 minutes until golden brown.
