- 1 small zucchini, shredded
- 1 red bell pepper, diced
- 1 ½ cups cottage cheese
- 4 large eggs
- 1 cup shredded cheddar or mozzarella
- ½ cup onion, finely chopped
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 tbsp olive oil (for greasing)
- Fresh parsley or chives (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease your 9×9-inch baking dish with the olive oil.
- Lightly steam or sauté the broccoli, garlic, and onions until softened.
- Shred the zucchini and squeeze out excess moisture.
- In a large bowl, whisk together the cottage cheese, eggs, salt, pepper, and paprika.
- Stir in the prepared vegetables and shredded cheese.
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for 30–35 minutes until golden and set in the center.
- Let it cool slightly before slicing and garnish with parsley or chives.
