Description

Delicious, healthier cookie dough bites that are high in protein and free from refined sugars.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup natural almond or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup vanilla or chocolate protein powder
  • 1/4 cup mini dark chocolate chips
  • Pinch of sea salt

Instructions

  1. Create oat flour by pulsing the rolled oats in a food processor until coarse.
  2. Mix dry ingredients in a medium bowl—oat flour, protein powder, and sea salt.
  3. Blend in nut butter, sweetener, and vanilla extract, mixing until a cohesive dough forms.
  4. Fold in mini dark chocolate chips until evenly distributed.
  5. Scoop out dough with a tablespoon and roll into small balls.
  6. Chill the bites on a parchment-lined tray for 20 to 30 minutes for the best texture.
  7. Store in an airtight container in the refrigerator for up to one week.

Notes

For added variety, swap chocolate chips for dried fruits, or try different nut butters.
