Description

A luscious twist on cheesecake, this Healthy Cheesecake Jar combines silky cream cheese with graham cracker crumbs and a vibrant cherry topping for a guilt-free indulgence.


Ingredients

Scale
  • 240 g halved pitted cherries
  • 15 ml fresh lemon juice
  • 5 ml water
  • 5 ml cornstarch
  • 250 g cream cheese
  • 100 g sugar (or sweetener of choice)
  • 5 ml vanilla extract
  • 100 g graham cracker crumbs
  • 50 g butter (or coconut oil)

Instructions

  1. Beat together the cream cheese, sugar, and vanilla extract until smooth.
  2. Combine cherries, lemon juice, water, and cornstarch in a saucepan and cook until thickened, about 5-7 minutes.
  3. Mix graham cracker crumbs with melted butter until well combined.
  4. Layer the graham cracker mixture at the bottom of jars, then add cheesecake filling and cherry mixture.
  5. Refrigerate jars for at least 2 hours before serving.

Notes

Ensure cream cheese is at room temperature for easier mixing. You can customize the fruit toppings too!
