A luscious twist on cheesecake, this Healthy Cheesecake Jar combines silky cream cheese with graham cracker crumbs and a vibrant cherry topping for a guilt-free indulgence.
Ingredients

- 240 g halved pitted cherries
- 15 ml fresh lemon juice
- 5 ml water
- 5 ml cornstarch
- 250 g cream cheese
- 100 g sugar (or sweetener of choice)
- 5 ml vanilla extract
- 100 g graham cracker crumbs
- 50 g butter (or coconut oil)
Instructions
- Beat together the cream cheese, sugar, and vanilla extract until smooth.
- Combine cherries, lemon juice, water, and cornstarch in a saucepan and cook until thickened, about 5-7 minutes.
- Mix graham cracker crumbs with melted butter until well combined.
- Layer the graham cracker mixture at the bottom of jars, then add cheesecake filling and cherry mixture.
- Refrigerate jars for at least 2 hours before serving.
Notes
Ensure cream cheese is at room temperature for easier mixing. You can customize the fruit toppings too!
