Description

A wholesome and comforting casserole combining ground turkey, zucchini, and melty mozzarella cheese for a delightful family meal.


Ingredients

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. Add olive oil to a large skillet over medium heat; sauté chopped onion and minced garlic until fragrant.
  4. Cook ground turkey in the skillet until browned, breaking it up with a spoon.
  5. Stir in the drained diced tomatoes, dried herbs, salt, and pepper; simmer gently.
  6. Layer half of the zucchini, then half the turkey mixture, and half the cheese in the baking dish; repeat.
  7. Bake in the preheated oven for 30-35 minutes until bubbly and golden brown.
  8. Let cool for 5 minutes before serving.

Notes

Make the casserole a day in advance and refrigerate unbaked. For a crispier finish, you can use an air fryer.
