- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, drained
- 1 cup shredded mozzarella cheese
- 1 tsp dried Italian herbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with olive oil.
- Add olive oil to a large skillet over medium heat; sauté chopped onion and minced garlic until fragrant.
- Cook ground turkey in the skillet until browned, breaking it up with a spoon.
- Stir in the drained diced tomatoes, dried herbs, salt, and pepper; simmer gently.
- Layer half of the zucchini, then half the turkey mixture, and half the cheese in the baking dish; repeat.
- Bake in the preheated oven for 30-35 minutes until bubbly and golden brown.
- Let cool for 5 minutes before serving.
Notes
Make the casserole a day in advance and refrigerate unbaked. For a crispier finish, you can use an air fryer.
