- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup corn (fresh or frozen)
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or preferred type)
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat a large skillet over medium heat. Add the ground turkey and cook it until golden brown, breaking it apart with a spoon (about 5-7 minutes). Drain any excess fat.
- Sauté the chopped onion and minced garlic until the onions turn translucent (about 3-4 minutes).
- Incorporate the diced sweet potatoes, corn, black beans, cumin, paprika, salt, and pepper. Let the mix simmer for around 10 minutes.
- Transfer the mixture into a greased 9×13 inch baking dish and spread it out evenly. Top generously with shredded cheese.
- Bake for 25-30 minutes until the cheese is bubbling and golden.
- Cool for a few minutes and garnish with fresh cilantro before serving.
