Description

This comforting casserole combines tender sweet potatoes and savory ground turkey, all topped with gooey cheese. Perfect for family gatherings!


Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn (fresh or frozen)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or preferred type)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a large skillet over medium heat. Add the ground turkey and cook it until golden brown, breaking it apart with a spoon (about 5-7 minutes). Drain any excess fat.
  3. Sauté the chopped onion and minced garlic until the onions turn translucent (about 3-4 minutes).
  4. Incorporate the diced sweet potatoes, corn, black beans, cumin, paprika, salt, and pepper. Let the mix simmer for around 10 minutes.
  5. Transfer the mixture into a greased 9×13 inch baking dish and spread it out evenly. Top generously with shredded cheese.
  6. Bake for 25-30 minutes until the cheese is bubbling and golden.
  7. Cool for a few minutes and garnish with fresh cilantro before serving.
