- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Juice of 1 lime
- 1 large ripe mango, peeled, pitted, and diced
- 1 ripe avocado, diced
- 1/2 small red onion, finely chopped
- 1/2 red bell pepper, diced
- 1 small jalapeño, seeded and finely chopped (optional)
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Preheat your grill: Get your grill ready by heating it to medium-high — about 400°F.
- Prepare the marinade: In a small bowl, whisk together the olive oil, smoked paprika, cumin, garlic powder, salt, freshly ground black pepper, and lime juice.
- Marinate the chicken: Place the chicken breasts in a dish, pouring the marinade over top. Allow to marinate for at least 15 minutes.
- Make the salsa: In a medium bowl, combine diced mango, avocado, red onion, bell pepper, jalapeño, cilantro, lime juice, salt, and pepper. Gently toss.
- Grill the chicken: Place marinated chicken on the grill and grill for about 6 to 7 minutes on each side until the internal temperature reaches 165°F.
- Rest and serve: Remove the chicken from the grill and let it rest for 5 minutes before slicing and serving with mango avocado salsa.
