Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Juice of 1 lime
  • 1 large ripe mango, peeled, pitted, and diced
  • 1 ripe avocado, diced
  • 1/2 small red onion, finely chopped
  • 1/2 red bell pepper, diced
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat your grill: Get your grill ready by heating it to medium-high — about 400°F.
  2. Prepare the marinade: In a small bowl, whisk together the olive oil, smoked paprika, cumin, garlic powder, salt, freshly ground black pepper, and lime juice.
  3. Marinate the chicken: Place the chicken breasts in a dish, pouring the marinade over top. Allow to marinate for at least 15 minutes.
  4. Make the salsa: In a medium bowl, combine diced mango, avocado, red onion, bell pepper, jalapeño, cilantro, lime juice, salt, and pepper. Gently toss.
  5. Grill the chicken: Place marinated chicken on the grill and grill for about 6 to 7 minutes on each side until the internal temperature reaches 165°F.
  6. Rest and serve: Remove the chicken from the grill and let it rest for 5 minutes before slicing and serving with mango avocado salsa.

Notes

You can marinate the chicken overnight for deeper flavor.
