- 1 lb chicken (cut into pieces)
- 4 cups chicken broth
- 1 cup tomatillos (husked and quartered)
- 1 can hominy (drained and rinsed)
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 1 jalapeño (seeded and chopped)
- 1 tsp cumin
- 1 tsp oregano
- Salt to taste
- Lime wedges (for serving)
- Chopped cilantro (for garnish)
- Sliced radishes (for garnish)
Instructions
- Combine the chicken, chicken broth, tomatillos, onion, garlic, and jalapeño in a large pot. Bring everything to a roaring boil.
- Lower the heat and let it simmer gently for about 30 minutes, or until the chicken is tender.
- Shred the chicken using two forks, then return it to the pot to soak up the broth.
- Dump in the drained hominy, cumin, oregano, and salt to taste. Allow the mixture to simmer for another 15-20 minutes.
- Ladle the pozole into warm bowls, garnishing with fresh lime wedges, chopped cilantro, and sliced radishes.
Notes
Prepare the broth and chicken a day in advance for deeper flavors. You can substitute chicken with beans or jackfruit for a vegetarian version.
