Description

A warm and comforting green pozole featuring tender chicken, tomatillos, and a zesty broth, perfect for cozy family dinners.


Ingredients

  • 1 lb chicken (cut into pieces)
  • 4 cups chicken broth
  • 1 cup tomatillos (husked and quartered)
  • 1 can hominy (drained and rinsed)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 jalapeño (seeded and chopped)
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt to taste
  • Lime wedges (for serving)
  • Chopped cilantro (for garnish)
  • Sliced radishes (for garnish)

Instructions

  1. Combine the chicken, chicken broth, tomatillos, onion, garlic, and jalapeño in a large pot. Bring everything to a roaring boil.
  2. Lower the heat and let it simmer gently for about 30 minutes, or until the chicken is tender.
  3. Shred the chicken using two forks, then return it to the pot to soak up the broth.
  4. Dump in the drained hominy, cumin, oregano, and salt to taste. Allow the mixture to simmer for another 15-20 minutes.
  5. Ladle the pozole into warm bowls, garnishing with fresh lime wedges, chopped cilantro, and sliced radishes.

Notes

Prepare the broth and chicken a day in advance for deeper flavors. You can substitute chicken with beans or jackfruit for a vegetarian version.
