Description

A hearty Greek Chicken Casserole that weaves together Mediterranean flavors, with juicy chicken, vibrant vegetables, and creamy feta, perfect for gatherings.


Ingredients

  • 4 chicken breasts, skinless and boneless
  • 2 cups cooked rice (brown preferred)
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup olives, chopped (preferably Kalamata)
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat and sauté minced garlic until fragrant, about 2 minutes.
  3. Cook the chicken breasts seasoned with salt, pepper, and oregano, browning both sides for about 5–7 minutes.
  4. Prepare a baking dish by combining cooked rice, halved cherry tomatoes, chopped spinach, chopped olives, and crumbled feta cheese.
  5. Layer the browned chicken breasts on top of the rice mixture.
  6. Cover the dish with aluminum foil and bake for 25-30 minutes.
  7. Serve hot and enjoy the Mediterranean flavors!

Notes

Make-ahead by preparing the casserole the night before, and store it in the fridge for improved flavor.
