- 4 chicken breasts, skinless and boneless
- 2 cups cooked rice (brown preferred)
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup olives, chopped (preferably Kalamata)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat and sauté minced garlic until fragrant, about 2 minutes.
- Cook the chicken breasts seasoned with salt, pepper, and oregano, browning both sides for about 5–7 minutes.
- Prepare a baking dish by combining cooked rice, halved cherry tomatoes, chopped spinach, chopped olives, and crumbled feta cheese.
- Layer the browned chicken breasts on top of the rice mixture.
- Cover the dish with aluminum foil and bake for 25-30 minutes.
- Serve hot and enjoy the Mediterranean flavors!
