- 4 pieces ribeye steaks (about 1-inch thick, 8 oz each)
- Salt, to taste
- Pepper, to taste
- 4 tablespoons butter
- 4 cloves garlic (minced)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Season the ribeye steaks generously with salt and pepper on both sides. Let them sit at room temperature for a bit.
- Place a large skillet over medium-high heat and add 2 tablespoons of butter. Allow the butter to melt and become bubbly.
- Carefully place the seasoned steaks into the hot skillet and cook for about 4 to 5 minutes on one side.
- Flip the steaks using tongs, add the remaining 2 tablespoons of butter and minced garlic. Cook for an additional 4 to 5 minutes for a perfect medium-rare finish.
- Remove the steaks from the skillet and let them rest for about 5 minutes.
- Lower the heat and add heavy cream to the skillet, whisking continuously to scrape up the browned bits.
- Stir in grated Parmesan cheese, whisking until the sauce thickens (about 3 to 4 minutes), adjusting with salt and pepper as necessary.
- Slice the rested steaks, plate them, and drizzle the Parmesan cream sauce over the top. Garnish with chopped parsley.
