Ingredients

  • 8 oz Cream Cheese
  • 1 cup Sugar
  • 1/2 cup Milk
  • 1/4 cup Unsalted Butter
  • 6 large Egg Yolks
  • 6 large Egg Whites (Whipped to soft peaks)
  • 3/4 cup All-Purpose Flour
  • 1/4 teaspoon Salt
  • 1/4 cup Cocoa Powder (optional)
  • 1 cup Mashed Bananas or Applesauce
  • 1/2 cup Chopped Nuts
  • 1/4 teaspoon Cayenne Pepper

Instructions

  1. Preheat your oven to 320°F (160°C) and prepare a cupcake tray with liners.
  2. In a mixing bowl, cream the cream cheese and unsalted butter until smooth, gradually adding sugar until fluffy.
  3. Mix in the milk and egg yolks until well blended.
  4. Sift together the all-purpose flour, cocoa powder, and salt, then fold into the cream cheese mixture.
  5. In a separate bowl, whip the egg whites to soft peaks.
  6. Gently fold the whipped egg whites into the batter in three portions.
  7. Mix in mashed bananas or applesauce and chopped nuts, if desired.
  8. Spoon the batter into the liners, filling them three-quarters full.
  9. Bake for 20-25 minutes until puffed and a toothpick comes out clean.
  10. Cool in the tray for a few minutes before transferring to a wire rack.

Notes

Ensure egg whites are whipped properly for best results. You can prepare the batter a day in advance and store it in the fridge.
