- 6 large Egg Yolks
- 6 large Egg Whites (Whipped to soft peaks)

- 1/4 teaspoon Salt
- 1/4 cup Cocoa Powder (optional)
- 1 cup Mashed Bananas or Applesauce
- 1/2 cup Chopped Nuts
- 1/4 teaspoon Cayenne Pepper
Instructions
- Preheat your oven to 320°F (160°C) and prepare a cupcake tray with liners.
- In a mixing bowl, cream the cream cheese and unsalted butter until smooth, gradually adding sugar until fluffy.
- Mix in the milk and egg yolks until well blended.
- Sift together the all-purpose flour, cocoa powder, and salt, then fold into the cream cheese mixture.
- In a separate bowl, whip the egg whites to soft peaks.
- Gently fold the whipped egg whites into the batter in three portions.
- Mix in mashed bananas or applesauce and chopped nuts, if desired.
- Spoon the batter into the liners, filling them three-quarters full.
- Bake for 20-25 minutes until puffed and a toothpick comes out clean.
- Cool in the tray for a few minutes before transferring to a wire rack.

Ensure egg whites are whipped properly for best results. You can prepare the batter a day in advance and store it in the fridge.
