Description

A light and fluffy flatbread made with cottage cheese, perfect for a variety of toppings or enjoyed on its own.


Ingredients

  • 1 cup all-purpose flour, plus extra for dusting
  • ½ teaspoon baking powder
  • ¼ teaspoon fine salt
  • ¼ teaspoon garlic powder, optional
  • ½ cup full-fat cottage cheese, well drained
  • 1 large egg
  • 1 tablespoon olive oil, plus extra for cooking
  • 1 teaspoon fresh chopped herbs such as parsley or chives, optional
  • 1 to 2 tablespoons water, if needed for dough consistency

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, salt, and garlic powder until evenly combined.
  2. In a separate bowl, combine the drained cottage cheese, egg, olive oil, and chopped herbs. Use a fork or small whisk to break up the curds until the mixture becomes relatively smooth.
  3. Pour the wet mixture into the dry ingredients. Stir gently with a spatula until a shaggy dough forms. If the dough feels too dry, add water 1 teaspoon at a time until it comes together into a soft, slightly sticky ball.
  4. Turn the dough onto a lightly floured surface. Fold and press the dough about 6 to 8 times to form a cohesive ball.
  5. Cover the dough ball with a towel and let it rest for 10 minutes.
  6. Divide the dough into 4 equal portions and roll each into a smooth ball, then flatten each ball into a round flatbread about ¼ inch thick.
  7. Warm a large nonstick or cast-iron skillet over medium heat and brush lightly with olive oil.
  8. Cook each flatbread for 2 to 3 minutes until bubbles form and the underside is golden brown, then flip and cook for another 1 to 2 minutes.
  9. Transfer the cooked flatbread to a plate and cover to keep warm while you repeat with the remaining dough.

Notes

Make-Ahead: Prepare the dough ahead and refrigerate for up to 24 hours. Cooking alternatives include using an air fryer at 375°F for a crispier finish.
