A vibrant pasta salad infused with briny olives, creamy feta, and a zesty olive oil dressing, perfect for any occasion.
Ingredients

- 225 grams dried pasta of choice
- 1 cup large green olives, pitted and roughly chopped
- 100 grams feta cheese, cubed
- 80 millilitres extra virgin olive oil
- 60 millilitres olive brine
- 1 clove fresh garlic, minced
- Zest of 1/2 lemon
- Juice of 1/4 lemon
- Freshly ground black pepper, to taste
Instructions
- Boil the pasta in a large pot of lightly salted water according to package instructions until al dente.
- Drain the pasta in a colander and rinse under cold water.
- Prepare the dressing in a small jar by combining olive oil, olive brine, minced garlic, lemon zest, lemon juice, and black pepper. Seal and shake.
- Combine the cooled pasta with olives and feta in a large mixing bowl. Pour the dressing over and toss.
- Taste and adjust seasoning if needed.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Make-ahead for best flavor. Allow the salad to chill to let flavors meld.
