- 1 large cauliflower, broken into florets
- 6 tablespoons olive oil
- 1 teaspoon Old Bay seasoning
- 0.5 teaspoon chili pepper
- Fresh ground black pepper, to taste
- 225 grams sharp white cheddar cheese, grated
- 115 grams parmesan cheese, grated
Instructions
- Preheat your oven to 230°C (450°F).
- Break the cauliflower into bite-sized florets.
- Combine the florets with olive oil in a large mixing bowl.
- Add Old Bay seasoning, chili pepper, and black pepper. Toss to coat.
- Transfer the seasoned florets to a foil-lined baking sheet.
- Roast on the top oven rack for 15 minutes.
- Grate the cheddar and parmesan cheese during the roasting.
- Remove the baking sheet from the oven and sprinkle cheese over the florets.
- Return to the oven and bake for an additional 7-10 minutes.
- Serve immediately while hot and melty.
