Description

Deliciously crispy feta cheese nests holding perfectly fried eggs, served on toasted bread. A simple yet impressive dish for breakfast or brunch.


Ingredients

  • 3.5 oz feta cheese, crumbled
  • 2 large eggs
  • 1.5 tablespoons olive oil
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon red pepper flakes (optional)
  • 2 slices crusty bread, toasted
  • Fresh herbs (parsley, dill, or chives), chopped

Instructions

  1. Heat the olive oil in a nonstick skillet over medium heat until shimmering.
  2. Sprinkle crumbled feta into the skillet, forming two small mounds.
  3. Let the feta sizzle for 1 to 2 minutes until golden brown and crispy.
  4. Crack one egg into the center of each feta nest, being careful not to break the yolks.
  5. Cover the skillet and cook for about 3 to 4 minutes, until the whites are set and the yolks are runny.
  6. Season with black pepper and red pepper flakes if desired, then serve immediately over toasted bread, garnished with fresh herbs.

Notes

For make-ahead options, prepare feta nests in advance and reheat quickly before adding eggs. Can substitute with goat cheese or ricotta for different flavors.
