- 8 oz spaghetti or fettuccine
- 1 cup ripe tomatoes (diced)
- 1 cup heavy cream
- 4 cloves fresh garlic (minced)
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil (chopped)
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Add the spaghetti or fettuccine, cooking until al dente per package instructions. Drain and set aside, retaining some pasta water.
- In a large skillet, heat extra virgin olive oil over medium heat. Sauté minced garlic until golden brown.
- Add diced tomatoes, salt, and pepper to the skillet. Simmer for about five minutes until tomatoes soften and release juices.
- Reduce heat to low and stir in heavy cream, blending until the sauce is smooth.
- Toss cooked pasta into the sauce, adding reserved pasta water if needed to reach desired consistency.
- Serve hot, garnished with fresh basil and optional Parmesan cheese.
Notes
Make the sauce ahead of time to save on prep. Customize with proteins or veggies as desired.
