Description

A delightful meal combining ground turkey, creamy rice, and vibrant vegetables, inspired by Korean flavors.


Ingredients

  • 1 lb ground turkey
  • 4 large eggs
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 inch piece ginger, minced
  • 1 medium carrot, julienned
  • 1 cup baby spinach
  • 2 tablespoons gochujang
  • 1.5 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1/3 cup chicken or vegetable broth
  • 2 tablespoons heavy cream or coconut cream (optional)
  • 3 cups cooked short-grain rice (preferably day-old)
  • 2 tablespoons sliced scallions
  • 1 teaspoon toasted sesame seeds
  • Kimchi (optional for serving)

Instructions

  1. Prepare the Jammy Eggs: Bring water to a gentle boil in a saucepan. Add the eggs and simmer for 7 minutes. Transfer to an ice bath, peel, and set aside.
  2. Sauté the Aromatics: In a large skillet, heat sesame oil over medium-high heat. Add onion, garlic, and ginger; stir until softened, about 3 minutes.
  3. Cook the Turkey: Add ground turkey and break it apart. Cook for 5 to 6 minutes until browned. Drain excess fat if necessary.
  4. Add Vegetables: Stir in julienned carrots and cook for 2 minutes until slightly tender.
  5. Add the Sauces: Lower heat to medium and add gochujang, soy sauce, honey, rice vinegar, and broth. Mix well and let simmer.
  6. Creamy Twist: Stir in heavy cream (if using) and baby spinach. Cook for about 1 minute until spinach wilts.
  7. Mix in the Rice: Add cooked rice and mix thoroughly until heated throughout.
  8. Finish and Serve: Spoon the mixture into bowls, top with halved jammy eggs, scallions, and sesame seeds. Serve with kimchi on the side if desired.

Notes

For best results, use day-old rice. Customize with additional vegetables or spices as desired.
