Ingredients
Scale
- 1 lb ground turkey
- 4 large eggs
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 inch piece ginger, minced
- 1 medium carrot, julienned
- 1 cup baby spinach
- 2 tablespoons gochujang
- 1.5 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1/3 cup chicken or vegetable broth
- 2 tablespoons heavy cream or coconut cream (optional)
- 3 cups cooked short-grain rice (preferably day-old)
- 2 tablespoons sliced scallions
- 1 teaspoon toasted sesame seeds
- Kimchi (optional for serving)
Instructions
- Prepare the Jammy Eggs: Bring water to a gentle boil in a saucepan. Add the eggs and simmer for 7 minutes. Transfer to an ice bath, peel, and set aside.
- Sauté the Aromatics: In a large skillet, heat sesame oil over medium-high heat. Add onion, garlic, and ginger; stir until softened, about 3 minutes.
- Cook the Turkey: Add ground turkey and break it apart. Cook for 5 to 6 minutes until browned. Drain excess fat if necessary.
- Add Vegetables: Stir in julienned carrots and cook for 2 minutes until slightly tender.
- Add the Sauces: Lower heat to medium and add gochujang, soy sauce, honey, rice vinegar, and broth. Mix well and let simmer.
- Creamy Twist: Stir in heavy cream (if using) and baby spinach. Cook for about 1 minute until spinach wilts.
- Mix in the Rice: Add cooked rice and mix thoroughly until heated throughout.
- Finish and Serve: Spoon the mixture into bowls, top with halved jammy eggs, scallions, and sesame seeds. Serve with kimchi on the side if desired.
Notes
For best results, use day-old rice. Customize with additional vegetables or spices as desired.
